Chilled Vegetable Course
This is the way we start off your meal. All these vegetables are coming from our farm. We kind of get them in every day and figure out exactly how we want to cook it depending on what the vegetable is going to be best. Take all the cooking liquid from the vegetables, turn that into a dressing that sits on top. Then there's herbs and flowers from our garden and that we forage from up and down the coast. Right off the bat, everything that we've already seen earlier today, we're starting to see immediately on the menu. We've seen all these different vegetables growing at the farm. We've seen all these different plants growing around this property. To just be welcomed with a dish that introduces all of it and kind of gives you that sense of place rather immediately is fantastic.
Cured Rockfish
I mean, the colors are beautiful. I mean, this umeoshi salt, beautifully pink, and then you've got a little bit of another pink condiment here. You can never go wrong with the raw preparation of fish, but when you add a little bit of that flavor with these other condiments, I mean, this takes it to another level. I'm sad it's only four pieces, but we still have a lot of food, so don't count your chickens before they hatch. Lovely start.
Crab Legs in a Rock
This next dish is a very special one because we have seen it in pretty much every form that it has. Right now we finally get to try it. I'm from San Francisco and we have a lot of crab in San Francisco. It is naturally one of my favorite dishes and the way they've done it here is just so rich. Has such a deep flavor. If you serve this as a main at any restaurant, I mean, I could eat a giant, giant bowl of this one. And then here we have leg. I mean, seeing how much effort goes into this dish makes me almost not want to eat it, but of course, we have to try it. That orange pano on top is just that little tiny layer of acidity that you need. Otherwise, it is natural. It is pure and it is fantastic.
Abalone with Celery and Rice
We always have abalone on the menu as well. And it's one of the things where the way we cook it will change seasonally. This current abalone has celery from the farm that's super super special right now. It doesn't need any seasoning. We don't do anything to it. There's something we call seaweed vinegar ku left over from making the dashi. There's a rice that's made with what we refer to as the guts or the stomach. Abalone are eating a ton of seaweeds. So we pair that with a nori broth that you blend them with and that will season local rice. Another one of the classic dishes, we have abalone. In fact, it is so classic that they actually have abalone hanging up on the wall, the shelves all over the wall in the dining room, which is pretty cool. Abalone is very, very native to here. It's quite famous. In fact, there are literal books in their library that are about abalone. If you like abalone done wrong, really chewy, not a pleasant texture. This one is easy to eat. The flavor is very delicate. That pure abalone flavor comes through nicely is accompanied by all these beautiful vegetables that contrast that chewiness with a bit of crunch. But then of course we also have the rice. And this is what I'm really excited for. I mean that is just beautiful rice. That's my favorite bite of the meal so far. They do not shy away from putting flavors of the sea into things. And that is sea flavor. Oh, and the texture of the rice is beautiful. It's perfect.
