Shawarma alla Milanese
This is chicken milanese-style — breaded and fried, but not too crunchy because it's for a sandwich. The marinade is incredible, with about twenty spices, paprika, yogurt. The garlic cream is amazing, and the Arabic salad with yogurt, mayonnaise, olive oil, salt, carrots, and cabbage is my favorite thing here. The bread is pre-cooked and then toasted on the griddle for crunch. This is way better than the lamb one — it's delicious, much more indulgent. I'd say it's the best of the four we made today.

This one has lamb shawarma, carbonara sauce with egg yolk, pecorino, pepper, and Wagyu butter — no guanciale because it's pork. The Wagyu butter has a very strong flavor, you can taste a fatty aftertaste. I can barely taste the carbonara, just a hint of egg. It's edible, you don't have to force yourself to finish it, but if I saw it on a menu I wouldn't order it. However, with mint it becomes completely different — it's delicious. The mint was the perfect ingredient.
