Lonza tonnata
The meat could have been a little more pink, but I read it's cooked sous-vide, so it's perfectly cooked to the core. Very good, very moist and tender, also thanks to the sauce which is really tasty. The tonnata sauce is very citrusy and fresh, with a nice lemon kick. I really like the cooking of the pork loin — it's perfect. Look at it, perfect.
