This is a typical Roman bread with a special cut that opens up during cooking. The trippa is fantastic — they managed it well, the sauce isn't too liquid, it stays solid and hearty. The only thing I'd change is a bit more pecorino, there's very little. But it's really, really good.

The ingredients inside are very interesting: a cured meat that's very sweet, probably paired with fig cream. The zucchini are cooked just right — al dente, my favourite doneness. The cured meat gets a bit lost though; I would have preferred cooked ham, much saltier. But overall it's a good sandwich, the ingredients are excellent in a non-trivial way.
Ciriola con Melanzane alla Parmigiana
This is a Roman-style parmigiana, not the Campana one — the eggplants aren't breaded. It's missing fresh basil, I would have added it on top. But I love it, much more than the classic Campana parmigiana. The flavour is decisive, there's cheese, mozzarella, and a lot of oregano — maybe too much oregano. The sauce is well made, the eggplants are light. We ate like pigs, and if I can still take a bite and appreciate it, it means it's really good.
