The guanciale is crispy and you can really taste it's from Norcia, different from the bacon. The sauce has a slight acidity from the tomato that works beautifully. The burger is cooked a bit less than the first one, but the whole composition is amazing. This is one of the best sandwiches I've ever eaten.
