This is their homage to the Big Mac. Two 100g smash patties, all the Big Mac ingredients. The bun is made in a lab with their own recipe — it's very good, more bread-like, less potato-y. Compared to what I've tried in Milan, this is much more attenuated, fresher, simpler. I really appreciated the pickles, not too much. The sauce is good but I don't taste it that much, and the meat takes a back seat to the bun. When you get a bite with sauce, onion, pickle all together, there's balance. But if you get a bite with just bun and meat, it feels like something's missing. When you add the pickle, the whole flavour changes. There's lettuce, which I'm not a big fan of on smash burgers. Purely on taste, I'd give it 8.5. Something's missing — I ate more than half and felt something was lacking — but it's still super good. I really appreciated the freshness, it's a different breeze from all the crispy smash burgers I've eaten this past month. And for €10 with 200g of meat, that's crazy value.
Chicken Spicy
This is a whole different league, it has nothing to do with the others. It's probably the best one, my favourite — I love fried chicken. I can taste the thigh, I can taste the chicken in my mouth, and then the sauce. It really reminds me of Korea, when I had Korean fried chicken dipped in chili. I think Giana tried this too. I'd give it 9.25. For €11, this is what I would buy. Honestly, I'd eat this. It's hilarious that I'm doing a smash burger series and my favourite is a fried chicken sandwich.

Potato Smash
This one has a hash brown inside. It's the most challenging to eat, probably over half a kilo. There's a lot of fried potato, the potato smash wraps around the bite. I appreciate how it contrasts the hardness/crunchiness, and when you chew you really taste the bacon. The flavour is strong, very crunchy. Compared to the fried chicken one, I prefer the bacon here because it goes with the softness of the potato — the potato gives that soft, creamy bite that accompanies everything. I expected it to cover the meat, but here I taste the meat more than in the previous one. It doesn't beat the fried chicken though. One notch above the last one I ate with onion. The strong point is the contrast between bacon and potato, all accompanied by the Alabama sauce, which I would have added a bit more of because on the side I taste it little. When I bit into the centre it was good, flavourful, savoury, gave a nice contrast. But on the side bites it was missing. I'd give it a 9 minus. For now, the fried chicken was far superior.
Biscotto al Burro
This is one of my favourite desserts. I'm crazy about cookies. Since last time I came, they seem slightly improved. I know they studied them for over a year to change the recipe. They're very similar but more balanced, less doughy. You just want to finish one and eat another. This is out of category — forget the smash burgers, for me this is the strong point of Bukies. They created the format designed by Giana and Piero: the cookie and the burger. Bukies for me is the example of bringing America to Italy. Well done! This is super approved. I would come just for this. If I had to choose, maybe I wouldn't come to eat burgers, but I'd gladly eat this every day.
