Carbonade Flamande
This is a beef stew cooked in beer, with onions and brown sugar giving it a fantastic sweetish taste. After simmering for an hour, you cover the pot with slices of spiced bread spread with mustard, then cook for three more hours until the bread falls apart into a creamy sauce. I had it served over fries, like a Belgian version of poutine — the meat is super tender, and the sauce is a wonderful mix of sweet and mustardy. For two dishes and two beers we paid €59, which is objectively a lot, but from what friends told me, it's in line with Brussels prices.
Tartare
I couldn't resist ordering a tartare — it's one of the best I've had in recent years. It's cut into big chunks, so it's coarsely chopped, seasoned divinely with lots of mustard and onion. Delicious.
