The story
At Bomba Paella, a stall inside Borough Market’s Market SE1, the paella is "flavorful, juicy" with "perfectly cooked rice and plenty of seafood," according to Jack’s Dining Room. He notes it "lacks the traditional crispy edge from Spain," a trade-off purists will notice, but the open-kitchen setup and generous seafood have earned a loyal following.
Mark Wiens calls it a "massive, flavor-packed seafood paella" with al dente rice, jumbo prawns, lobster, and scallops, declaring it a must-eat for seafood lovers. This is Spanish market cooking that leans into moisture and abundance over blistering crust—a solid, juicy bowl in a buzzy, no-fuss setting.

Reviewers rave about Bomba Paella's seafood paella, calling it a deeply flavorful, soul-warming triumph. The overall vibe is one of unpretentious, joyful satisfaction.
“That is an intense meaty like caramelized flavor to it. With the rice that's cooked al dente so it has a little bit of a crunch to it. Perfect. It's absorbed all that broth, that meat broth. The chicken. So, I think they actually saute down the chicken so it releases the chicken juice and it kind of like creates that caramelized chicken juice and then it's scraped up and then it's that absorbs into the rice creating all that flavor. The scallop is massive. Sweetness. Wobbliness. Absorbed with that paella flavor. The jumbo tiger prawn is firm, meaty, sweet. The lobster tail is dripping with garlicky butter. The seafood, the wobbly seafood. Yes. Sweet and tender. Absorbed with a garlicky butter. Like juicy with garlicky butter. This place, it's right in the heart of Borough Market. You can't miss it. If you love seafood, this is a must eat when you're at Borough Market.”

The flavoring of the rice is very good. The seasoning is delicious. The only thing it misses is that crunch around the edge, which you normally get in Spain. But the juiciness of the rice and you got so much seafood mixed in is pretty great. I think the rice is cooked so perfectly and so delightful because it's almost like a pasta where you have it a little bit al dente. This is the same kind of to the tooth feel. I do think it is a little bit fishy, but the fish in it work very well together. And of course, nothing with this much saffron is going to suck.
