This is the classic brisket, 100% Fassona beef brisket, cooked for 24 hours with house spices and cooking juices. The guy who works here, the creator of the recipes, told me they marinate all these cuts with 30 different spices. There's some chili sauce and honey mustard in there. The combination is totally new for brisket—it tastes like an oriental sandwich. There's also some spring onion and they use chili peppers. It's delicious, the only criticism I can make is that it covers the brisket flavor a bit, but the sauce is out of this world. The brisket is well-masticated and cut thick, so you feel it when you bite. I'm struggling to tell you which of the three I preferred so far.
Pulled Beef
This is the pulled beef. It's soaked in juice—a bit too much, look at the bottom. The bread loses its crunchiness because of that. But the other half is better, less soaked. They put green salsa on it, the same spicy one from the previous sandwich. The guy suggested this pairing instead of the classic BBQ with caramelized onions, and I trusted him. The green salsa gives a very fresh note, probably from the parsley. It's much better this way than with BBQ, in my opinion. The pulled beef is shredded super well, and with all these sauces it becomes creamy, not dry. They put a bit too much juice on one half, but the bread is so crunchy in other areas that I forgive it. The only thing is maybe a bit more pulled beef would have been appreciated, but it's still excellent.
