The pizza bianca, a crackling, airy marvel, earns rapturous praise as the standout dish. Reviewers describe a warm, convivial vibe, celebrating simple, masterful Roman baking.

This pizza bianca is hot and freshly baked. I can already tell from the dough that it's like a cloud. I hope it tastes that way in the mouth. Sometimes it's a bit too much, but overall it's good. Hot it works. It's not like the one you find in Rome, more seasoned, more aggressive, more bread-like. A bit breadier, but in a good way — not heavy or hard to chew.

    • Pizza Bianca
    • Pizzetta rossa con mozzarella

A wonderful little red pizza with mozzarella, freshly baked. Positive, positive. Maybe a bit burnt on the bottom, but who cares? The tomato is crushed peeled tomatoes, very fresh, quality. It's a simple dough, probably direct dough, you can see from the color. But it does its job. This is the beauty of these bakeries — maybe technically behind, but more authentic because they use the wood oven. Tradition is what I'm looking for.

    • Pizza ripiena prosciutto e mozzarella

This is a hit. Beautiful color, great crunchiness. Look at the bottom. This is gorgeous. As soon as I saw it I enjoyed it. I'll finish it. The pizza from the old-school bakery almost seems like wood-fired. True, with the right grease underneath. It's good. Well filled, with good prosciutto, aged. You can taste the prosciutto inside. It's cured ham, not cooked ham. This is excellent. The cooking is beautiful — different on top and bottom. The dough is different too, more floury. On top it's crunchy, underneath it's golden with that grease. I think there's some oil underneath that fries it a bit. The dough is like a sort of Rieti-style puff pastry. This is a 9.5.
