A classic Italian home recipe: tender and flavorful totani (squid) slowly stewed in a tomato-based sauce with garlic, chili, capers, and white wine. Perfect for 'scarpetta' dipping with bread.

Ingredients

- Olive Oilextra virgin, a drizzle

- Desalted Capersdesalted
- White Winea glass (dry white wine)
- Tomato Pastea little
- Tomato Passataa little
- Saltto taste
- Pepperto taste
Method
- Clean the totani: separate the tentacles from the body, remove the innards, keep only the tentacles.
- Remove the beak from the tentacles and cut off the eyes.
- Cut the body into rings and halve the tentacles.
- In a pan with high sides, heat a drizzle of oil and sauté a clove of garlic and a piece of fresh chili.
- Add desalted capers and stir.
- Add the totani and sauté well.
- Increase the heat and deglaze with a glass of white wine.
- After the alcohol has evaporated, add a little tomato concentrate and tomato passata, salt, pepper, and mix well.
- Cover and cook for about 20 minutes.
- Serve hot, with bread for dipping.
