A savory pie made with puff pastry, layered with eggplant, sun-dried tomatoes, scamorza cheese, and Parmesan. Quick and easy to prepare, perfect as an appetizer or for a lunch out.

Ingredients
8 items- Eggplantsuse long eggplants
- Dried Tomatoescoarsely chopped
- Scamorzasliced thin
- Parmigiano Reggianograted
- Puff Pastryrectangular puff pastry sheet
- Extra Virgin Olive Oilfor brushing the pan
- Saltto taste
- Pepperto taste
Method
- Trim the eggplants and slice them using a mandoline set to 4 mm thickness (or use a knife).
- Coarsely chop the sun-dried tomatoes.
- Slice the scamorza cheese into thin slices, about the same thickness as the eggplants.
- Brush a baking pan with extra virgin olive oil to avoid using parchment paper.
- Line the pan with the puff pastry, pressing it into the edges.
- Arrange a layer of eggplant slices at the bottom, then season with salt and pepper.
- Sprinkle half of the chopped sun-dried tomatoes over the eggplants.
- Add half of the grated Parmesan cheese.
- Add half of the scamorza slices.
- Repeat with another layer of eggplants, seasoning, remaining sun-dried tomatoes, Parmesan, and scamorza.
- Fold the edges of the puff pastry inward to enclose the filling.
- Bake in a static oven at 180°C (350°F) for about 40 minutes.
