Method

  1. Pour the yogurt into a large bowl. Use plain whole unsweetened yogurt; the yogurt jar will be your measuring cup for all other ingredients.
  2. Add one jar (same amount as the yogurt) of grated Grana Padano cheese and start mixing with an electric mixer.
  3. Add the egg yolks, a pinch of salt, and one jar of seed oil. Mix well.
  4. Add two jars of flour and one jar of starch. Continue mixing.
  5. Add the instant yeast for savory preparations (about one packet, equivalent to one jar volume).
  6. Gradually add one jar of milk while mixing.
  7. Set the batter aside. Prepare the filling: cut provola cheese into small cubes, cut salame into cubes, and chop fresh thyme and marjoram.
  8. Fold the chopped herbs and the cubed cheese and salame into the batter.
  9. In a separate clean bowl, beat the egg whites until stiff peaks form.
  10. Fold the egg whites into the batter: first one third vigorously, then the rest gently.
  11. Transfer the mixture into a cake pan lined with parchment paper (or into a muffin pan for individual portions).
  12. Bake in a static oven preheated to 180°C (350°F) for about 35 minutes, until golden.
  13. Let cool slightly, then slice and serve.
