7-Jar Apple Cake

A super easy and delicious apple cake made using a yogurt jar as a measure. The secret is to sauté the apples with cinnamon before adding them to the batter for extra flavor and texture.

Method

  1. Peel and core the apples. Cut them into cubes about 2 cm in size.
  2. In a pan, melt a knob of butter and add cinnamon. Sauté the apple cubes until slightly caramelized. Remove from heat and let cool.
  3. In a bowl, whisk the eggs with 2 yogurt jar measures of sugar until pale and fluffy (about 10 minutes).
  4. Gradually add the oil in a thin stream while whisking continuously.
  5. Add 1 jar of yogurt, then sift in 2 jars of flour, 1 jar of potato starch, and 1 packet of baking powder. Mix on low speed until combined.
  6. Fold in two-thirds of the sautéed apples.
  7. Pour the batter into a buttered and floured cake pan. Top with the remaining apples.
  8. Bake in a preheated oven at 180°C (350°F) for about 50 minutes.
