Ingredients
12 items- Fresh Tuna
- White Sesame
- Black Sesame Seeds
- Poppy Seeds(optional) — optional
- Extra Virgin Olive Oil
- 2 pcsEgg
- 400 mlPeanut Oil
- Sicilian Lemon
- Sicilian Orange
- Salt
- Basil(optional) — optional garnish
- Raw Extra Virgin Olive Oil(optional) — optional finishing drizzle
Method
- Preheat the oven to 180°C static.
- Dry the tuna piece thoroughly with paper towels.
- Rub the tuna with a little extra virgin olive oil.
- Mix white sesame seeds, black sesame seeds, and optional poppy seeds in a bowl.
- Coat the tuna evenly on all sides with the sesame mixture.
- Heat a large pan over medium-high heat and sear the tuna for 1 minute on each of the four sides.
- Place the seared tuna on a baking sheet lined with parchment paper.
- Increase oven temperature to 200°C and bake the tuna for 5-6 minutes, until the internal temperature reaches 36-38°C (or until the center is still pink).
- Remove the tuna from the oven and let it rest for 2 minutes.
- While the tuna rests, prepare the citrus mayonnaise: In a tall jar, combine 2 eggs, 400 ml peanut oil, lemon juice, orange juice, lemon zest, orange zest, and a pinch of salt. Using an immersion blender, blend starting from the bottom until emulsified.
- Slice the tuna thinly against the grain.
- Arrange the tuna slices on a serving platter.
- Pipe or spoon the citrus mayonnaise over the tuna.
- Garnish with fresh basil leaves and a drizzle of raw extra virgin olive oil if desired.
