Ingredients
7 items- Egg Yolksor pasteurized egg yolks
- Sugardivided
- Mascarponeat room temperature
- Egg Whitesor pasteurized egg whites
- Ladyfingersladyfingers
- Coffeecooled, strong espresso
- Cocoa Powderunsweetened, for dusting
Method
- In a bowl, add the egg yolks and half the sugar, and whip until light and fluffy.
- (Optional: if you prefer, you can use pasteurized egg yolks and whites in the same quantity.)
- Add the mascarpone one spoonful at a time, continuing to stir with the beaters. When it has a creamy consistency, set aside.
- In another bowl, whip the egg whites with the remaining sugar until stiff peaks.
- Fold a small part of the egg whites into the mascarpone mixture, mix well, then fold in the rest gently from top to bottom.
- Spread two spoonfuls of cream on the base of a dish.
- Dip the savoiardi (ladyfingers) briefly into cooled coffee and arrange a layer on the cream.
- Spread a layer of cream over the ladyfingers, then another layer of dipped ladyfingers, and cover with the remaining cream.
- Refrigerate for a couple of hours.
- Before serving, dust the top with cocoa powder.
