A Japanese-inspired beef tataki recipe: tenderloin marinated in soy sauce, honey, apple cider vinegar, orange and lemon juice, then seared with cocoa powder and caramelized with the marinade. Served with a creamy homemade paprika mayonnaise and garnished with sprouts.

- 200 mlOilvegetable oil or neutral oil
- Lemon Juicefor mayonnaise
- Saltto taste
- Unsweetened Cocoacocoa powder
- Germogli(optional) — for garnish
Method
- Prepare the marinade: mix soy sauce, honey, apple cider vinegar, orange juice, and lemon juice.
- Place the beef tenderloin in the marinade and let it sit for 4 hours.
- Prepare the paprika mayonnaise: whisk together an egg yolk, sweet paprika, 200 ml of oil, lemon juice, and salt.
- Heat a pan. Dust the tenderloin with cocoa powder.
- Sear the beef in Japanese style for a few minutes on all sides.
- Add a spoonful of the marinade and let it caramelize.
- Slice the beef: crispy on the outside and tender and juicy inside.
- Plate with the caramelized marinade, paprika mayonnaise, and garnish with sprouts.
