A Japanese-inspired beef tataki recipe: tenderloin marinated in soy sauce, honey, apple cider vinegar, orange and lemon juice, then seared with cocoa powder and caramelized with the marinade. Served with a creamy homemade paprika mayonnaise and garnished with sprouts.

Method

  1. Prepare the marinade: mix soy sauce, honey, apple cider vinegar, orange juice, and lemon juice.
  2. Place the beef tenderloin in the marinade and let it sit for 4 hours.
  3. Prepare the paprika mayonnaise: whisk together an egg yolk, sweet paprika, 200 ml of oil, lemon juice, and salt.
  4. Heat a pan. Dust the tenderloin with cocoa powder.
  5. Sear the beef in Japanese style for a few minutes on all sides.
  6. Add a spoonful of the marinade and let it caramelize.
  7. Slice the beef: crispy on the outside and tender and juicy inside.
  8. Plate with the caramelized marinade, paprika mayonnaise, and garnish with sprouts.
