Beef Tartare

A classic beef tartare, simple and refined, seasoned with olive oil, capers, and pepper, served with a buttery orange and juniper sauce, and garnished with pomegranate and chives.

- Sugara pinch of sugar
- Minta fresh mint leaf
- Sabacooked grape must (saba)
- Red Raspberry Vinegarraspberry vinegar
- Pomegranatepomegranate seeds

- Chili Pepperfresh chili pepper, finely chopped or flakes
- Salad Heartlettuce heart, such as iceberg or radicchio
Method
- Take a piece of very lean beef and place it in the freezer for about 30 minutes, or in a bowl of ice water, to firm it up.
- Cut the beef into very small, uniform cubes (about 3-4 mm).
- Place the chopped beef over ice water to keep it cold and prevent oxidation.
- Season with extra virgin olive oil, caper powder, and black pepper. Mix gently. Let it rest on the ice.
- In a pan, melt butter with cloves, juniper berries, and a little sugar.
- Add a thick slice of orange and a mint leaf. Cook briefly.
- Add saba (cooked grape must) and raspberry vinegar. Stir and remove from heat. This is the garnish sauce.
- Season the tartare with salt (add a squeeze of lemon or more pepper if desired).
- Using a ring mold, shape the tartare onto a plate.
- Garnish with lettuce heart, pomegranate seeds, and chives.
- Place the orange slice from the sauce on top and drizzle the sauce around the tartare.
- Finish with a drizzle of extra virgin olive oil and a sprinkle of chili pepper.
