Seafood Tagine with Pasta and Langoustines

A quick and easy seafood tagine with pasta and langoustines, cooked entirely in the tagine pot. Moroccan spices, fresh herbs, and a rich fish broth create a flavorful one-pot dish perfect for sharing.

Ingredients
21 items- Extra Virgin Olive Oilgenerous amount
- 2 pcsGarlicwhole cloves
- Potatoescut into chunks
- Onionchopped
- Bell Pepperchopped bell pepper
- Scampilegs and heads used for broth, bodies cleaned and added later
- Tomatoestomatoes
- Pastaraw, any short pasta
- Mintfresh, to taste
- Thymefresh, to taste
- Pistachios(optional) — optional
- Almonds(optional) — optional, can be added
- Fish Brothfish broth, as needed
- Moroccan SpicesMoroccan spice mix (ras el hanout style), generous amount
- Cardamomcardamom, to taste
- Cumincumin, to taste
- Pepperblack pepper, to taste
- Harissaharissa, a bit
- Currycurry powder, a bit
- Saltsalt, to taste
- Parsleyfresh, for serving
Method
- Add a generous amount of extra virgin olive oil to the tagine.
- Add whole garlic cloves.
- Cut potatoes into chunks and add them.
- Add chopped onion.
- Add chopped bell pepper.
- Add the scampi legs and heads to infuse flavor.
- Clean the scampi: press and remove the shell, then remove the intestine.
- Add tomatoes.
- Add raw pasta to the tagine.
- Add mint, thyme, pistachios, and almonds.
- Pour in fish broth.
- Add Moroccan spice mix, cardamom, cumin, pepper, and a bit of harissa.
- Cover and cook.
- At three-quarters cooking, remove the scampi heads, press them, and return them. Add curry and salt.
- Add the cleaned scampi bodies.
- Cover and cook for a few more minutes.
- Serve sprinkled with parsley and a drizzle of olive oil.
