Method
- Clean the escarole by separating the leaves and cut them into pieces.
- In a pan with oil, add a clove of garlic and a piece of chili pepper, then sauté the escarole. Add salt, cover, and cook, stirring occasionally.
- Remove the garlic, then add pine nuts, olives, and softened raisins. Sauté well.
- Boil potatoes, mash them, and add to the escarole mixture.
- Add breadcrumbs little by little and mix. The filling is ready.
- Roll out a rectangular sheet of puff pastry.
- Place the filling in the center, leaving the edges empty.
- Shape the strudel by folding the front and back edges, then the sides.
- Optionally, decorate with another sheet of puff pastry cut into shapes.
- Prick the strudel with a fork and brush with beaten egg.
- Bake at 200°C (390°F) for about 30 minutes.
