A classic Italian recipe: marinated chicken skewers grilled alongside vegetables, bursting with flavour from herbs and spices.

Method
- Cut the chicken breast into large, irregular cubes.
- Heat a pan with extra virgin olive oil and sear the chicken pieces for 30 seconds.
- Prepare the vegetables: zucchini, eggplant, tomato, onion, mushroom, bell pepper. Cut them appropriately.
- For the marinade: in a bowl, mix olive oil, chili pepper, fresh parsley, dried oregano, chervil, turmeric, salt, and a little water. Stir well.
- Add the seared chicken to the marinade and let it rest for 1–2 hours.
- In the same pan used for the chicken, add a little fat and grill the vegetables until slightly charred.
- Assemble the skewers: alternate chicken pieces and pancetta on skewers.
- Grill the skewers on the same hot pan or barbecue until cooked through and slightly charred.
- Arrange the grilled vegetables on a serving plate.
- Place the chicken skewers on top of the vegetables.
- Drizzle with a little extra virgin olive oil and sprinkle with salt. Serve immediately.
