- Extra Virgin Olive OilA drizzle
- RosemaryFresh or dried
- 1 pcsGarlicWhole clove
- Guanciale (Cured Pork Cheek)A piece for flavor
- Red Bell PepperDiced or cut into strips
- LeekSliced
- Tropea Spring OnionSliced
- White WineFor deglazing
- MustardDijon or whole grain
- Moroccan SpicesRas el hanout or similar blend
- ParsleyFresh, chopped
- Black PepperFreshly ground
- Baby SpinachFor serving
- SaltTo taste
- ButterA knob to finish
- Bay Leaf(optional) — For garnish (optional)
Method
- Trim the veal, removing some outer fat but keeping most of it.
- Heat a pan with a drizzle of extra virgin olive oil, rosemary, a garlic clove, and some guanciale.
- Add the veal pieces and red bell pepper, and brown quickly over high heat.
- Add leek and Tropea onion (spring onion).
- Deglaze with white wine, then stir in mustard, Moroccan spices, and more onion and peppers.
- Return the browned meat to the pan.
- Add parsley, black pepper, and baby spinach. Season with salt.
- Finish with a knob of butter.
- Serve the stew on a bed of spinach that has been quickly sautéed in butter. Arrange the meat and peppers nicely, garnish with a bay leaf and extra spices if desired.
