Nonna's Lazy Spaghetti

A no-cook sauce made with raw garlic, chili, anchovies, pecorino, and parsley tossed with al dente spaghetti. A quick and flavorful dish inspired by Italian nonna comfort.

Ingredients
9 items- Spaghettiartisanal spaghetti
- Garlicfinely chopped
- Sea Saltcoarse sea salt, for garlic paste and pasta water
- Extra Virgin Olive Oilextra virgin olive oil
- Pasta di Peperoncino Calabreseor fresh chili, finely chopped
- Anchoviesanchovy fillets
- Pecorino Romanograted
- Parsleyfinely chopped
- Cherry Tomatoes(optional) — cherry tomatoes, diced (optional)
Method
- Finely chop the garlic cloves and place them in a large bowl. Add a pinch of coarse sea salt and a drizzle of extra virgin olive oil. Use the back of a fork or a pestle to crush the garlic into a paste.
- Add the Calabrian chili paste (or finely chopped fresh chili), anchovy fillets, finely chopped parsley, and grated Pecorino Romano cheese. Mix well to combine. Optionally, you can add diced cherry tomatoes.
- Bring a large pot of salted water to a boil and cook the spaghetti according to package directions until al dente (about 7 minutes).
- Drain the spaghetti, reserving a little pasta water. Transfer the hot pasta directly into the bowl with the raw sauce. Toss vigorously to coat, adding a splash of pasta water if needed to emulsify.
- Serve immediately, garnished with extra Pecorino and parsley if desired.
