Spaghetti with Octopus White Ragù

A quick and easy summer recipe for spaghetti with a white octopus ragù, made with only a few ingredients.

Ingredients
9 items- 1 kgOctopusFresh octopus, about 1 kg
- ParsleyA bunch, both stems and leaves
- Cherry TomatoA handful, halved
- 2 pcsGarlic2-3 cloves, in skins
- 1 pcsChili Pepper1 fresh or dried chili, sliced
- SaltTo taste
- Black PepperFreshly ground
- Extra Virgin Olive OilAs needed for cooking and finishing
- Lemon Zest(optional) — Optional, grated
Method
- Cut the octopus into small pieces, remove the beak, and cut the head into strips.
- Wash and halve the cherry tomatoes.
- In a casserole, heat olive oil, add garlic cloves, sliced chili, and parsley stems. Sauté.
- Add the cut octopus and sear for 5 minutes without adding any liquid. Season with black pepper.
- After 5 minutes, add the halved tomatoes, stir, cover, and cook over very low heat for 45-55 minutes, until the octopus is tender.
- Taste and adjust salt. Remove the garlic cloves.
- Add the spaghetti directly to the ragù and cook until al dente, adding boiling water if needed, for about 13-14 minutes.
- Finish with a drizzle of olive oil and fresh chopped parsley. Optionally, add grated lemon zest.
- Serve immediately.
