Quick and easy puff pastry pastries filled with a creamy ricotta and coffee mixture and chocolate chips. Perfect for a simple yet impressive dessert.

Ingredients
10 items- RicottaDrain the ricotta for at least 1 hour, preferably overnight, to avoid a runny cream.
- Powdered Sugar
- CoffeeUse espresso or strong brewed coffee, cooled.
- Dark Chocolate Drops
- Panna fresca da montareWhipped to stiff peaks.
- Puff Pastry1 roll of store-bought puff pastry, or homemade.
- Melted ButterFor brushing the pastry.
- Granulated SugarTo sprinkle on the pastry before baking.
- Chicchi di Caffè(optional) — For decoration (optional).
- Zucchero a Velo (per spolverare)For dusting the finished pastries.
Method
- Whip the cream to stiff peaks and set aside.
- In a bowl, combine the drained ricotta with icing sugar and mix with a spatula.
- Add the cooled coffee and stir until well blended.
- Add the chocolate chips and mix to distribute them evenly.
- Gently fold in the whipped cream little by little with delicate upward movements to avoid deflating the mixture.
- Cover the cream with plastic wrap and refrigerate.
- Meanwhile, roll out the puff pastry on a cutting board and cut into 16 equal rectangles.
- Transfer the pastry rectangles to a baking sheet, brush with melted butter, and sprinkle with granulated sugar.
- Prick the entire surface of each rectangle with a fork to prevent excessive puffing during baking.
- Space the rectangles slightly apart on the baking sheet.
- Bake in a preheated fan-assisted oven at 180°C (350°F) for 10 minutes, or until golden and crisp.
- Let the baked puff pastry rectangles cool completely.
- Transfer the chilled cream into a piping bag.
- Pipe a dollop of cream onto one pastry rectangle and top with another to form a sandwich.
- Repeat with the remaining rectangles.
- Dust the pastries with icing sugar and garnish each with two coffee beans.
