Veal Cutlets with Artichokes

Today I prepared a very simple recipe that I really love: veal cutlets with white wine and a side of artichokes. In my opinion it's a great dish. What do you think?

Ingredients
15 items- Carciofia few artichokes
- Lemonjuice of one lemon for soaking water
- 1 pcsGarlic1 clove
- 2 pcsMinta couple of fresh mint leaves
- Chili Peppera pinch of chili pepper
- Saltto taste
- Black Pepperto taste
- Extra Virgin Olive Oilas needed
- Buttera couple of knobs, divided
- 3 pcsVeal Slicesveal cutlets, thin slices
- Flourfor dusting
- Sagea few leaves
- White Winea splash of dry white wine
- Stock(optional) — optional: a little stock (or more wine)
- White Pepperto taste for finishing sauce
Method
- Cut the artichokes into julienne strips and soak them in lemon water.
- Dry the artichokes well.
- Heat extra-virgin olive oil in a pan with a clove of garlic, a couple of mint leaves, salt, pepper, and chili pepper.
- Add the artichokes and sauté over high heat until browned and slightly crunchy outside.
- Add a knob of butter, mix, then remove the artichokes and set aside.
- Lightly flour the veal cutlets on both sides.
- In another pan, heat extra-virgin olive oil and a knob of butter with a few sage leaves.
- Cook the floured veal cutlets, turning once, over moderate heat; do not let them color (keep them pale).
- Add white wine and a little stock (or just wine) and let the alcohol evaporate.
- Season with a pinch of salt.
- Plate the cutlets and garnish with the sautéed artichokes.
- In the same pan, add white pepper and a knob of butter, then off the heat, swirl to emulsify the sauce.
- Pour the sauce over the cutlets and serve.
