Savory Pastries with Swiss Chard

Crispy puff pastry bites filled with a creamy blend of Swiss chard (or spinach), ricotta, and Parmesan. Easy homemade aperitivo.

Ingredients
9 items- Swiss Chardor spinach or mixed greens
- Olive Oilfor cooking the greens
- Ricotta
- Parmigiano Reggianograted
- Saltto taste
- Pepperto taste
- Nutmegto taste
- Puff Pastrystore-bought or homemade puff pastry
- Egg Yolkbeaten, for glazing
Method
- Cook the Swiss chard (or spinach / mixed greens) in a pan with a little oil until wilted.
- Finely chop the cooked greens with a knife and transfer to a bowl.
- Add ricotta, grated Parmesan, salt, pepper, and nutmeg. Mix well.
- Transfer the filling to a piping bag (or a freezer bag with the tip cut off).
- Cut the puff pastry into three strips. Pipe a line of filling along each strip.
- Fold the edges over the filling and press to seal. You may want to watch the video for the folding technique.
- Cut the filled pastry strips into small squares.
- Arrange the squares on a baking tray and brush the tops with beaten egg yolk.
- Bake in a preheated oven at 200°C (400°F) for 10–15 minutes until golden.
- Serve warm as an appetizer.
