Risotto with Ossobuco and Tropea Red Onion

A luxurious risotto featuring slow-cooked ossobuco (veal shank) and a vibrant sauce made from the green stems of Tropea red onions. The dish is finished with crispy bone marrow and a smooth ossobuco cream.

Method

  1. Sauté abundant Tropea onion in butter and oil for 5 minutes.
  2. Add the ossobuco (veal shanks) after removing the connective tissue. Season with salt and pepper. Sear well on both sides.
  3. Deglaze with sparkling wine and add tomato. Let it cook for one hour.
  4. Take the green stems of the onions, boil them, then blend with basil and oil to obtain a cream.
  5. When the ossobuco is ready, shred the meat with a knife.
  6. Prepare the risotto: toast the rice with a pinch of salt. When it smells like popcorn, add the wine and let the alcohol evaporate.
  7. Cook the risotto by adding vegetable broth gradually.
  8. Blend some of the onion sauce from the ossobuco to make another cream.
  9. When the rice is done, mount with butter and Parmigiano Reggiano.
  10. Plate: place the risotto, top with shredded ossobuco marrow, then decorate with ossobuco cream and Tropea onion stem cream.
