Risotto alla Milanese with Ossobuco

A true Milanese risotto, creamy with saffron, paired with tender ossobuco braised with shallots and white wine. The marrow enriches both the meat and the risotto for an authentic, hearty dish.

Method

  1. Prepare a base of finely chopped shallots in extra-virgin olive oil.
  2. Add the ossobuchi and toast them for about 10 minutes.
  3. Season with salt and pepper, then deglaze with white wine (Prosecco).
  4. Cover and let the ossobuchi cook for 1 hour.
  5. Meanwhile, macerate saffron pistils in a little water.
  6. Wet the rice with white wine and let it absorb.
  7. Add the macerated saffron and cook the rice with meat broth until al dente.
  8. Remove the risotto from the heat, add butter and Parmigiano Reggiano, and mantecare (stir vigorously to make it creamy).
  9. Plate the risotto and top with the ossobuco.
