Risotto with Radicchio, Sausage and Gorgonzola

A rich and creamy risotto from Treviso, combining slightly bitter radicchio, crispy sausage, melted gorgonzola, and crunchy walnuts. A decadent dish perfect for cold nights.

Ingredients
17 items- 1 pcsTreviso RadicchioThe typical long radicchio from Treviso is recommended
- 2 pcsShallotOr substitute with onion
- 2 pcsSausageUse good quality fresh pork sausages
- 100 gSweet GorgonzolaChoose a creamy, sweet Gorgonzola
- 30 gButterFor the shallot sauté and for mantecatura (preferably salted butter)
- Extra Virgin Olive OilA drizzle for the sauté
- Carnaroli RiceCarnaroli or Vialone Nano recommended
- 375 mlProseccoHalf a bottle; use a dry extra brut
- Vegetable BrothHomemade with celery, carrot and onion
- 30 gWalnutsToasted and roughly chopped
- 20 gParmigiano ReggianoA small amount, grated
- SaltTo taste
- Black PepperTo taste
- Radicchio Crudo(optional) — For garnish; a few thin strips
- Celery(optional) — For the vegetable broth
- Carrot(optional) — For the vegetable broth
- Onion(optional) — For the vegetable broth
Method
- Wash the radicchio, remove the core, and cut into strips.
- Finely chop the shallots.
- Remove the casing from the sausages and crumble the meat.
- In a cold saucepan, add the crumbled sausage and cook over medium heat until browned and crispy. Remove and set aside.
- In the same pan, add butter and olive oil. Add the shallots and cook until softened and golden.
- Add the radicchio strips and sauté for 2-3 minutes until slightly wilted. Season with salt and pepper.
- Add the rice and toast for 2 minutes, stirring constantly.
- Pour in the prosecco and let the alcohol evaporate completely.
- Begin adding hot vegetable broth one ladle at a time, stirring frequently. Cook for 13-14 minutes until the rice is al dente.
- While the rice cooks, toast the walnuts in a dry pan or oven until fragrant. Chop roughly.
- When the rice is nearly done, stir in most of the reserved sausage (keep some for garnish).
- Remove the pan from heat. Add the gorgonzola cheese, a knob of salted butter, and a small amount of Parmigiano Reggiano. Stir vigorously to create a creamy emulsion (mantecare).
- Plate the risotto. Top with the remaining crispy sausage, chopped walnuts, and a few strips of raw radicchio.
