Tuscan Ragù

A hearty Tuscan ragù made with a soffritto of celery, carrots, onions, and pork, plus pancetta, mixed ground meat, sausages, red wine, tomato passata and paste, and a bouquet garni, slow-simmered for 3 hours and served with spaghetti and Parmigiano Reggiano.

Ingredients

- Carne di Maiale (gambe di prezzo)pork leg meat, finely chopped for soffritto
- Olive Oilextra virgin olive oil, for sautéing
- Pancettaslices, added after soffritto
- Ground Beef And Porkmixed ground beef and pork
- 2 pcsSausagesremove casings and crumble
- Saltto taste
- Pepperto taste
- Red Winered wine, generous amount for deglazing
- Tomato Passatatomato passata (strained tomatoes)
- Tomato Pastetomato concentrate (paste)
- Mazzetto Aromaticobouquet garni of fresh herbs (rosemary, sage, bay leaves)
- Spaghetticooked al dente, finished in the ragù
- Parmigiano Reggianofreshly grated, for serving
Method
- Prepare a soffritto by finely chopping celery, carrots, onions, and pork leg meat. Place in a pot with olive oil and sauté until softened.
- Add slices of pancetta and cook until rendered and slightly crispy.
- Add mixed ground beef and pork, and two sausages. Remove the sausage casings and crumble the meat into the pot.
- Season with salt and pepper to taste.
- Pour in a generous amount of red wine, let it sizzle and evaporate.
- Add tomato passata and a spoonful of tomato concentrate. Stir to combine.
- Make a bouquet garni with fresh herbs (such as rosemary, sage, and bay leaves) and add it to the sauce.
- Cover the pot and let it simmer gently for 3 hours, stirring occasionally.
- Cook spaghetti until al dente; in the last 2 minutes of cooking, transfer the pasta into the ragù and finish cooking together, tossing to coat.
- Serve the pasta with an abundant amount of ragù and freshly grated Parmigiano Reggiano.
