Tuna Ragù

A rich, slow-cooked tuna ragù with a deep tomato flavor, packed with anchovies, capers, and garlic. Perfect served over pasta or on crusty bread.

Ingredients
15 items- 700 gTunaFresh tuna, preferably red tuna or yellowfin; cut into large cubes
- CeleryAbundant, diced
- CarrotAbundant, diced
- OnionAbundant, finely diced
- 5 pcsAnchovies in OilUse Italian anchovies from the Mediterranean
- CapersLightly crushed with a knife; preferably Napoletan capers (chiapparelle)
- 1 pcsGarlic1 clove, grated
- ParsleyA bunch with stems
- Chili PepperFresh or dried chili pepper, to taste
- Olive OilExtra virgin olive oil, generous amount
- Red WineRed wine (he recommends a wine from his friend Nigiotti)
- Tomato PasteAbundant, to taste
- Tomato PassataExtra-fine tomato puree, to taste
- Black PepperFreshly ground, to taste
- SaltA little, because capers and anchovies are already salty
Method
- Peel and finely dice the carrot, celery, and onion into small cubes.
- In a large pot, add a generous amount of olive oil. Add the anchovies, grated garlic, and lightly crushed capers. Then add the diced vegetables, a bunch of parsley with the stem, and some chili pepper.
- Sauté over medium-high heat until the vegetables soften and become fragrant.
- While the base cooks, cut the tuna into large cubes (about 2–3 cm).
- Add the tuna cubes to the pot and sear without moving them too much for a few minutes, until lightly browned.
- Season with black pepper and a little salt (the capers are already salty).
- Pour in red wine and let the alcohol evaporate for a few minutes.
- Stir in a generous amount of tomato paste and tomato passata (puree). Mix well.
- Cover the pot and cook on low heat for 1 hour.
- After 1 hour, the tuna will be very tender. Use a fork (or your hands, when cool enough) to break the tuna into a ragù-like consistency.
- If serving with pasta, cook the pasta al dente, then finish cooking it in the ragù with a splash of pasta water for the last few minutes.
