Mashed Potatoes

This recipe is morally wrong, and that's why I'd make it again. Potatoes are baked whole on a salt bed, then sieved twice, mixed with hot milk and cold butter in a ratio of 2:3 butter to potato weight. The result is an incredibly creamy, sinful purée.

Method

  1. Place whole unpeeled potatoes on a bed of salt in a static oven to bake until fully cooked and dry.
  2. Open the potatoes and scoop out the flesh into a bowl.
  3. Pass the potato flesh through a sieve twice.
  4. Transfer the sieved potatoes to a pot over low heat. Add a splash of boiling whole milk and stir to temper.
  5. Add cold cubed butter (about 2/3 the weight of the potatoes) little by little, stirring until smooth and homogeneous.
  6. Season with salt only at the end.
  7. Level the mash in the pot.
  8. If not serving immediately, press a sheet of parchment paper directly onto the surface of the mash to prevent a skin forming, and keep warm.
