Mashed Potatoes

This recipe is morally wrong, and that's why I'd make it again. Potatoes are baked whole on a salt bed, then sieved twice, mixed with hot milk and cold butter in a ratio of 2:3 butter to potato weight. The result is an incredibly creamy, sinful purée.

Ingredients
5 items- Potatoeswhole, unpeeled
- Coarse Saltto form a bed for baking
- Whole Milka splash, boiling
- Buttercold, cubed; about 2/3 of the potato weight
- Fine Saltonly at the end, to taste
Method
- Place whole unpeeled potatoes on a bed of salt in a static oven to bake until fully cooked and dry.
- Open the potatoes and scoop out the flesh into a bowl.
- Pass the potato flesh through a sieve twice.
- Transfer the sieved potatoes to a pot over low heat. Add a splash of boiling whole milk and stir to temper.
- Add cold cubed butter (about 2/3 the weight of the potatoes) little by little, stirring until smooth and homogeneous.
- Season with salt only at the end.
- Level the mash in the pot.
- If not serving immediately, press a sheet of parchment paper directly onto the surface of the mash to prevent a skin forming, and keep warm.
