- Massage the pork shoulder with mustard.
- Prepare the rub: mix smoked sweet paprika, salt, pepper, and ginger.
- Cover the pork generously with the rub, making a thick coat.
- Place the pork in a baking dish and bake at 130°C (266°F) for 4 hours.
- Meanwhile, prepare the caramelized onion cream: slice the red Tropea onions.
- In a pan, caramelize muscovado sugar, then add the sliced onions and cook until caramelized.
- Blend the caramelized onions into a smooth cream.
- After 4 hours, remove the pork from the oven, baste it with beer.
- Cover the dish with aluminum foil and bake again at 130°C (266°F) for 3 hours.
- Remove the pork and shred it with your hands; it should be very tender.
- Assemble the sandwich: take a bun, dip it in the juices from the baking dish, spread caramelized onion cream, pile on the pulled pork, and place the top bun.
