A succulent pulled beef recipe from chef Federico Fusca. Beef brisket is slow-cooked with Tropea onions and broth, then shredded and served on toasted Tuscan bread.

Ingredients
4 items- Punta di PettoBeef brisket tip
- Tropea Red OnionRed onion from Tropea
- BrothBeef or vegetable broth
- 1/2 kgPane ToscatoTuscan bread (unsalted)
Method
- Go to the butcher and get the brisket tip.
- Season the meat well with aromatics and let it sit.
- Prepare a bed of Tropea onion and cut the meat.
- Sear the meat with a good Maillard reaction, then set it aside.
- In the same pan, toast the onions.
- Take a bottle of beer or wine, open it, and pour it into the pan.
- Cover the meat with three-quarters of the broth.
- Cover the pan with aluminum foil and place in the oven at 150°C for 4 hours.
- Remove from the oven and shred the meat with your hands.
- Put the shredded meat back in the broth and toss.
- Take half a kilo of Tuscan bread, slice and toast to make bruschetta, rub with garlic and oil.
- Dip the bread in the broth, then pile on the meat and sauce.
- Enjoy.
