Stuffed tomatoes are an iconic summer dish. Here Bruno Barbieri fills tomatoes with bread, capers, onion, olives, raisins, and cheese, and serves them with a creamy avocado and yogurt sauce.

Ingredients
20 items- TomatoesMedium-sized, ripe but firm
- BreadStale bread, crumbled with crust
- CapersSalted or brined, rinsed
- OnionOne medium onion, finely chopped
- Extra Virgin Olive OilAs needed for toasting, sautéing, and finishing
- SaltTo taste
- Chili PepperCrushed or chopped, to taste
- ParsleyFresh, chopped
- OlivesGreen or black, pitted, roughly chopped
- MintFresh leaves, torn
- Sultanina GrapesSoaked in warm water for a few minutes and drained
- CheesePecorino semi-aged or Parmigiano not too aged, grated
- AvocadoRipe, peeled and pitted
- LemonJuice only; about half a lemon
- ChivesFresh, chopped
- Greek YogurtPlain, full-fat
- CreamFresh liquid cream
- NutmegGrated, to taste
- CuminGround, to taste
- WaterAs needed to thin the sauce
Method
- Cut the top off the tomatoes and scoop out the pulp. Pat dry and season with salt.
- In a pan, toast the crumbled bread (with crust) in extra virgin olive oil.
- In another pan, sauté chopped onion in olive oil.
- In a bowl, combine the toasted bread, onion, capers, salt, chili, parsley, olives, mint, soaked sultanas, and grated cheese. Mix well.
- Fill the tomatoes with the mixture. Add a drop of oil inside before filling.
- Cover with the tops and bake at 180°C (350°F) for about 10 minutes, until the tomatoes are slightly soft.
- Meanwhile, prepare the sauce: blend the avocado, lemon juice, chives, salt, oil, Greek yogurt, cream, nutmeg, parsley, cumin, and a little water until smooth. (Optional: pass through a sieve.)
- Serve the warm tomatoes on a bed of sauce with a drizzle of oil.
