Imagine a puff pastry wrap enclosing a heart of mashed potatoes, spinach, cooked ham, and melted cheese: we are talking about the meatloaf prepared today! A truly inviting and rich alternative to the classic meat meatloaf!

Ingredients

- 250 gSpinach
- Extra Virgin Olive Oilto taste
- Pepperto taste
- Saltto taste
- 2 pcsEgg
- 25 gFlour
- 35 gGrated Breadalso for dusting
- 120 gCooked Ham
- 100 gCheese
- 1 pcsPuff Pastryrectangular roll
- 1 pcsEgg Yolk
- Sesame Seedsto taste
Method
- Boil 500g potatoes for 30 minutes.
- Cook 250g spinach with extra virgin olive oil to taste for 15 minutes.
- Mash the potatoes with a potato masher.
- Season with extra virgin olive oil, pepper, and salt to taste.
- Add 2 eggs and mix.
- Add 25g flour.
- Add 35g breadcrumbs.
- Mix and refrigerate for 10 minutes.
- Grease a sheet of parchment paper.
- Sprinkle with breadcrumbs.
- Transfer the potato mixture onto the parchment paper.
- Spread the mixture with oiled hands.
- Add 120g cooked ham.
- Add the spinach.
- Add 100g cheese.
- Using the parchment paper, roll up the filling.
- Wrap with parchment paper and refrigerate for 30 minutes.
- Place the filling in the center of 1 rectangular sheet of puff pastry.
- Cut off the side parts and wrap the filling.
- Weave the puff pastry over the filling.
- Brush with 1 egg yolk.
- Sprinkle with sesame seeds to taste.
- Bake in a static oven at 180°C for 30 minutes.
- Serve.
