Eggplant Meatballs in Tomato Sauce

Good and simple meatballs like grandma's, but made with eggplant. Soft, saucy, and super flavorful.

Ingredients

- Olive Oil
- Tomato PassataAbout 400 ml
- SaltTo taste
- Eggplants1 medium-large eggplant
- BreadcrumbsBreadcrumbs, about 4 tablespoons
- Gran a PadanoGrated, about 3 tablespoons
- ParsleyChopped fresh parsley, to taste
- PepperTo taste
- BasilFresh basil, for garnish
- Mustard(optional) — Optional, 1 tsp
- Cumin(optional) — Optional, 1/2 tsp
- WaterFor rinsing the tomato passata bottle and to thin the sauce
Method
- For the sauce: sauté a garlic clove in olive oil.
- Add the tomato passata, a little water, season with salt, and simmer covered for 30–40 minutes.
- Meanwhile, cut the eggplant into small dice.
- In a non-stick pan, heat olive oil with a crushed garlic clove.
- Add the eggplant cubes, season with salt, and cook over high heat for about 10 minutes, stirring occasionally.
- Remove the garlic and let the eggplant cool slightly.
- In a bowl, combine the cooked eggplant, breadcrumbs, grated Grana Padano, parsley, salt, and pepper. Optionally add mustard and cumin.
- Mix with your hands and form walnut-sized balls.
- In the same pan, heat a drizzle of oil, add the meatballs, and let them brown for about 5 minutes, shaking the pan to cook evenly.
- Add the tomato sauce to the pan, give a quick stir to coat.
- Remove from heat, garnish with fresh basil.
