Chef Joe Isidori demonstrates how to make his signature meatballs with a blend of beef and pork, ricotta, and a slow-cooked red sauce. The meatballs are fried until golden then simmered in a tomato sauce for three hours for a true New York Italian flavor.

Method

  1. Combine beef, pork, and ricotta in a large bowl. Mix well.
  2. Dip your hands in a little oil before handling the meat to help form smooth meatballs.
  3. Roll the mixture into meatballs.
  4. Fry the meatballs in oil until golden brown, about 2-3 minutes per side.
  5. Caramelize tomato paste in a pot, then add crushed DOP tomatoes and other seasonings to make the sauce.
  6. Place the fried meatballs into the sauce and simmer for three hours.
