Ingredients

Method
- Cut the chicken in half and cut into strips. Place in a bowl.
- Season with a pinch of salt, some pepper, a splash of rice wine (or white wine), and egg white. Mix.
- Add instant yeast, flour, and potato starch. Mix well.
- Gradually add cold sparkling water until you get a smooth and homogeneous batter.
- Fry the chicken in hot oil, spacing the pieces. Drain on paper towels and let rest a few minutes.
- Re-fry the chicken in the oil for a second frying until golden and crispy.
- Prepare the sauce: in a bowl mix water, potato starch, tomato paste, sugar, vinegar, and (optional) chili pepper.
- Pour into a saucepan over medium heat and stir until it thickens (a few minutes).
- Toss the fried chicken in the sauce and mix well.
- Plate and sprinkle with sesame seeds.
