A classic Italian hunter-style chicken stew slowly cooked with a soffritto of celery, carrot, onion, and leek, then simmered with crushed tomatoes, Tuscan olives, and a splash of white wine.

Ingredients

- Finely chop celery, carrot, onion, and leek to make a soffritto.
- Heat extra virgin olive oil in a pan and sauté the soffritto until softened.
- Add chicken thighs, season with salt, and brown them on all sides.
- Add Tuscan olives and stir briefly.
- Deglaze with a splash of white wine and let it evaporate.
- Crush peeled tomatoes by hand and add them to the pan.
- Cover and cook on low heat for about one hour.
- Serve hot, optionally eating with your hands for extra enjoyment.
