Hawaiian Poke with Smoked Salmon (Barbieri Style)

Method
- Slice the carrots, radishes, bell peppers, and tomatoes into strips or rounds. Set aside.
- Marinate the smoked salmon with extra virgin olive oil and soy sauce. Add a pinch of salt.
- In a pan, toast pumpkin seeds, sunflower seeds, and sesame seeds with a drizzle of olive oil. Add the bell peppers and cook with a pinch of salt.
- Prepare the cooked onion: add coarse salt, extra virgin olive oil, and balsamic vinegar.
- Finely chop the Tropea onion. Combine with mascarpone, extra virgin olive oil, turmeric, and a splash of water to make a dressing.
- Prepare another dressing: mix the remaining mascarpone with cream and sweet paprika.
- Make a soy sauce dressing: mix soy sauce with saffron and a drizzle of extra virgin olive oil.
- Assemble the poke bowl: line the bowl with lettuce, arugula, and herbs (mint, marjoram). Arrange the vegetables, salmon, seeds, onion, and dressings on top.
