Ingredients
10 items- 500 gManitoba Flour
- 100 gSemolina Flour
- 10 gFresh Brewer's Yeast
- 400 gWater
- 1 tspSugar
- 10 gSaltfor the dough
- 20 gExtra Virgin Olive Oilfor the dough
- 300 gTomato Passata
- Oregano
- 300 gProvola
Method
- Sift 500g Manitoba flour.
- Add 100g sifted semolina flour and mix.
- Add 10g fresh brewer's yeast.
- Prepare 400g water and add a little to the dough.
- Add 1 teaspoon sugar and mix.
- Cover with a cloth and let rise for 1 hour.
- Mix.
- Add 10g salt.
- Add the remaining water little by little.
- Add 20g extra virgin olive oil and mix.
- Cover with plastic wrap and let rise for 3 hours.
- Grease a baking sheet lined with parchment paper with EVOO.
- Pour the dough into the pan and level it.
- Season 300g tomato puree with EVOO, 3g salt, and a pinch of oregano.
- Spread the tomato puree over the dough.
- Season with oregano and EVOO.
- Bake in a convection oven at 200°C for 25 minutes.
- Cut 300g provola cheese into small cubes.
- Add the cheese to the pizza.
- Bake in a convection oven at 200°C for 15 minutes.
- Serve in slices.
