A delicious summer pizza topped with rocket pesto, stracciatella, cherry tomatoes, and marinated anchovies from the Cantabrian Sea.

Ingredients
12 items- 500 gManitoba Flour
- 4 gBrewer's Yeast
- 10 gSalt
- 300 gWater
- 100 gArugula (for Pesto)For the pesto
- 75 gExtra Virgin Olive Oil
- 25 gPine Nuts
- Salt (for Pesto)To taste
- 200 gCherry Tomatoes
- 250 gMozzarella Di Bufala (Or Stracciatella)Buffalo mozzarella or stracciatella
- 30 gFresh ArugulaFor topping
- 12 pcsRizzoli Marinated AnchoviesMarinated anchovies from the Cantabrian Sea
Method
- In a bowl, combine the flour with the yeast and about half the water. Begin kneading.
- Add the salt and remaining water. Continue kneading.
- Transfer to a work surface and knead for about 10 minutes until smooth.
- Shape into a ball, cover with plastic wrap, and let rise for about 2 hours in a warm place until doubled.
- Turn the dough onto the work surface, divide it in half, and shape each half into a ball.
- Place each ball in a pan or tray, cover, and let rise for another 30 minutes.
- Meanwhile, prepare the rocket pesto: in a blender, combine the rocket, pine nuts, oil, and a pinch of salt. Blend until smooth.
- Cut the cherry tomatoes in half.
- Stretch each dough piece with oiled fingers, let rest for another 30 minutes.
- Prick the dough with a fork and bake in a preheated oven at 230°C (450°F) for about 15 minutes.
- Top the baked base with rocket pesto, cherry tomatoes, stracciatella (or buffalo mozzarella), fresh rocket, and marinated anchovies.
- Serve immediately.
