Grandma Pina's Pesto

A homemade pesto from Nonna Pina, made with fresh basil, garlic, pine nuts, olive oil, and salt. No cheese in the pesto itself – grated pecorino is added per preference when serving with pasta.

- Harvest basil leaves, leaving the small ones to grow.
- Remove all the stems from the basil leaves.
- Wash the basil thoroughly in cold water; rinse twice if needed.
- Spread the basil leaves on a cloth to dry completely.
- In a blender, add 2 cloves of garlic (chopped), a pinch of salt, pine nuts (to taste), and a generous amount of extra virgin olive oil.
- Add the basil leaves gradually and blend until smooth, adding more oil as needed to reach the desired consistency.
- Transfer the pesto to a jar and cover the surface with a layer of olive oil to preserve it.
- When serving with pasta, gently warm the pesto in a pan for a minute, then toss with cooked pasta. Optionally add grated pecorino cheese on top.
