Grandma Pina's Pesto

A homemade pesto from Nonna Pina, made with fresh basil, garlic, pine nuts, olive oil, and salt. No cheese in the pesto itself – grated pecorino is added per preference when serving with pasta.

Method

  1. Harvest basil leaves, leaving the small ones to grow.
  2. Remove all the stems from the basil leaves.
  3. Wash the basil thoroughly in cold water; rinse twice if needed.
  4. Spread the basil leaves on a cloth to dry completely.
  5. In a blender, add 2 cloves of garlic (chopped), a pinch of salt, pine nuts (to taste), and a generous amount of extra virgin olive oil.
  6. Add the basil leaves gradually and blend until smooth, adding more oil as needed to reach the desired consistency.
  7. Transfer the pesto to a jar and cover the surface with a layer of olive oil to preserve it.
  8. When serving with pasta, gently warm the pesto in a pan for a minute, then toss with cooked pasta. Optionally add grated pecorino cheese on top.
