Pan-fried swordfish with lemon, garlic, extra virgin olive oil and wild fennel: very few ingredients to taste the pure flavor of the fish, enhanced by a Mediterranean character.

10 items- Swordfish SteaksSwordfish steaks, about 200-250 g each
- Extra Virgin Olive OilTo taste
- SaltTo taste

- Lemon ZestZest of 1 lemon, plus more for garnish
- Wild FennelA few sprigs, to taste
- 2 pcsGarlicCloves, crushed
- Lemon JuiceJuice of 1 lemon
- Fresh Baby Salad(optional) — Optional, for serving
- Lemon Slices(optional) — Optional, for serving
Method
- Place the swordfish steaks in a dish. Season with olive oil, salt, pepper, lemon zest, and wild fennel. Mix well to coat. Cover with plastic wrap and marinate in the refrigerator for at least 1 hour.
- After marinating, let the swordfish sit at room temperature for 15 minutes.
- Pour a drizzle of olive oil into a pan, add two crushed garlic cloves, and brown them well.
- Lay the swordfish steaks in the pan.
- Keep the heat medium-high and do not touch the fish, so a nice crust forms.
- Turn the swordfish steaks and remove the garlic.
- Deglaze with lemon juice.
- Cook for another 2 minutes, until ready.
- Plate the swordfish, adding extra lemon zest and wild fennel.
- Serve with fresh salad underneath and lemon slices, if desired.
