A creamy and indulgent Neapolitan-style pasta dish with potatoes and mussels, cooked in the flavorful mussel broth and finished with pecorino cheese and fresh parsley.

Ingredients
10 items- MusselsFresh mussels, cleaned
- Olive OilExtra virgin olive oil
- GarlicCloves of garlic
- ParsleyFresh flat-leaf parsley, to taste
- 1 pcsChili PepperFresh or dried red chili, crushed
- White WineDry white wine
- PotatoesPotatoes, peeled and diced
- Tomato PasteTomato paste, a small amount
- CalamarataCalamarata pasta (or any short pasta like mixed pasta)
- Pecorino RomanoGrated pecorino romano cheese, to taste
Method
- Clean the mussels thoroughly.
- In a pan, add olive oil, garlic cloves, parsley, and crushed chili pepper.
- Add the mussels and a splash of white wine, cover, and cook for 5 minutes until they open.
- Shell the mussels and set aside.
- Peel the potatoes and cut them into small cubes.
- Filter the mussel broth through a fine sieve.
- In a pot, add the filtered broth, potato cubes, and a small amount of tomato paste.
- Add the pasta (calamarata or mixed pasta) directly into the broth and cook until al dente.
- Chop the parsley finely.
- When the pasta is ready, add the shelled mussels, chopped parsley, and a generous amount of grated pecorino cheese.
- Stir vigorously to create a creamy sauce.
- Serve immediately.
