A quick, creamy pasta dish with ricotta, tomato, and basil, finished with a touch of spicy chili. Inspired by Sicilian flavors.

Ingredients
9 items- Butteras needed
- Shallotfinely chopped, as needed
- Extra Virgin Olive Oila drizzle
- Salsa Arrabbiata o Passata di Pomodoroor any tomato passata, to taste
- Saltfor pasta water and to taste
- Pasta (Busiate o simile)preferably busiate, but any short pasta works
- Sheep's Ricottasheep ricotta, to taste
- Fresh Basila generous amount
- Dried Chili Pepperdried chili flakes, to taste
Method
- Add butter to a pan and melt it over medium heat.
- Add finely chopped shallots to the butter and cook until fragrant.
- Add a drizzle of extra virgin olive oil to lower the temperature and prolong cooking, allowing the shallots to release more flavor.
- Pour in arrabbiata sauce (or any tomato passata) and stir to combine.
- Meanwhile, bring a pot of salted water to a boil and cook the pasta (preferably busiate or similar) according to package directions.
- Add sheep ricotta to the sauce and stir until creamy.
- Drain the pasta al dente and add it to the sauce, tossing to coat.
- Add a generous amount of fresh basil leaves and toss again.
- Finish with a sprinkle of dried chili flakes (peperoncino) for a spicy kick.
- Serve immediately.
