A quick and tasty Neapolitan pasta dish born in the alleys of the Spanish Quarters of Naples, made with cherry tomatoes, basil, and a blend of Parmesan and Pecorino cheeses.

9 items- Datterini Cherry Tomatoes
- Garlic1 clove
- Chili Pepper1, seeds removed
- Basila few leaves
- Parmigiano Reggianograted, to taste
- Pecorino Romanograted, to taste
- Pastaspaghetti or your preferred shape
- Olive Oilextra virgin, as needed
- Saltfor the pasta water
Method
- Halve the cherry tomatoes.
- Grate the Parmesan and Pecorino cheeses.
- Bring a pot of salted water to a boil for the pasta.
- In a pan, heat olive oil and add a peeled garlic clove and a chili pepper (seeds removed).
- Add the halved cherry tomatoes and cook until softened.
- Remove the garlic, add some torn basil leaves.
- Cook the pasta al dente, then transfer it directly to the pan with the tomatoes, adding a splash of pasta cooking water.
- Turn off the heat and gradually add the grated cheeses, stirring to create a creamy sauce.
- Finish with the remaining torn basil leaves and serve immediately.
