A classic Sicilian pasta made with fried eggplant, fresh tomato sauce, basil, and salted sheep ricotta. This recipe follows the traditional method of Nonna.

- Garlic

- RigatoniOr other short pasta
- Salted Sheep's RicottaSalted sheep ricotta
Method
- Cut the eggplant into cubes or slices and fry in extra virgin olive oil until golden and crispy. Set aside.
- Crush the peeled tomatoes with your hands.
- In a pan, heat oil and garlic, then add the crushed tomatoes. Cook the sauce, adding basil, salt, and pepper.
- Cook the rigatoni pasta until al dente.
- Fry a few basil leaves in oil until crispy.
- Add the cooked pasta to the tomato sauce and toss well to coat (mantecare).
- Plate the pasta: top with crispy eggplant, crispy basil leaves, and a generous amount of salted sheep ricotta.
